Who puts carpet in a restaurant?

So for my Professional Practice class we have to spec out a restaurant for an assignment. One of the things we have to spec is carpet. It got me pondering, who would put carpet in a restaurant these days? Seems like it would be a pain to clean and maintain. So for my spec I am just going to use 'Flor' tiles since they can be pulled up, run through the dishwasher and cleaned. I dig this crocodile print.
